  • 2 Tbsp. melted unsalted butter
  • 2 cups ritz crackers, coarsely crushed
  • 1 (11-oz.) can white shoepeg corn, drained
  • 1 (14.5-oz) french style green beans-drained
  • 1 (10 3/4-oz.) can condensed cream of chicken soup
  • 1 (8-oz.) container sour cream
  • 4 oz. extra-sharp Cheddar cheese, shredded (about 1 cup)
  • 4 oz. Mild cheddar cheese, shredded (about 1 cup)
  • 1/4 tsp.white pepper
  • 1/4 tsp. garlic powder
  • 1 tsp. Onion powder

Directions

Preheat oven to 350 degrees

  • Melt butter and toss with crushed crackers, set aside.
  • Open and drain corn and green beans, do not mix.
  • Add drained corn to the bottom of a 2qt casserole dish.
  • Sir together drained green beans, seasonings, condensed soup, sour cream, and cheese in a large bowl until well combined.
  • Spread green bean mixture over the shoepeg corn evenly.
  • Sprinkle ritz topping evenly over green bean mixture in baking dish.
  • Bake in preheated oven until topping is lightly browned and casserole is gently bubbling around edges, 20 to 23 minutes. Remove from oven; let cool slightly, about 10 minutes. Serve warm. A double recipe can be increased easily into a 4 qt baking dish for a crowd.
